I noticed that the LS1 throttle bodies can start sticking, mine started doing this a month ago in my 02 Trans Am. I was told in order to fix this you must clean out the inside of the throttle body and unscrew the plates and then screw them back on. Supposedly this will adjust the plates inside, overtime they can move. I did this with mine and it seem to help.
